Here is a sam­ple menu for the first week of your egg­plant diet. And the sec­ond week you can do for your­self and your tastes.

  • DAY 1: break­fast — egg­plant puree soup with chick­en or tofu cheese, plain yogurt, din­ner — buck­wheat por­ridge and egg­plant meat­balls, fruit for a snack, din­ner — egg­plant sticks and a glass of kefir.
  • DAY 2: break­fast — egg­plant rolls and a plate of cot­tage cheese, din­ner — pie with sulu­gu­ni and egg­plant, veg­etable sal­ad, din­ner — egg­plant boats with meat and bell pep­pers, yogurt.
  • DAY 3: break­fast — egg­plant stewed in sour cream, chick­en egg, din­ner — a glass of kefir and rata­touille, din­ner — egg­plant, toma­to and chick­en sal­ad.
  • DAY 4: break­fast — egg­plant pan­cakes with sour cream, boiled chick­en, din­ner — baked egg­plant with pota­toes and cheese, din­ner — veg­eta­bles in gar­lic mari­nade, baked.
  • DAY 5: break­fast — sal­ad with egg­plant, toma­toes and egg, din­ner — egg­plant soup puree with tofu or chick­en, din­ner — egg­plant lean stew, a glass of kefir.
  • DAY 6: break­fast — whole grain toasts with egg­plant caviar, a glass of kefir and a boiled egg, din­ner — egg­plant juli­enne, fruit sal­ad, din­ner — a glass of kefir and pick­led egg­plants baked in toma­to sauce.
  • DAY 7: break­fast — chick­en breasts with egg­plant and a glass of kefir, din­ner — fruit sal­ad, egg­plant sticks and yogurt, din­ner — egg­plant boats with toma­toes, gar­lic and sour cream.
